Ingredients
5 oz beef tenderloin
• 1 tbsp Dijon mustard
• 1 tbsp fresh rosemary, finely minced
• 1 tbsp fresh thyme
• 2 cloves garlic, minced
• Salt and cracked black pepper
• 12 oz Brussels sprouts, halved
• 1 tsp olive oil• Salt and pepper to taste
Instructions
Preheat oven to 400°F.
In a small bowl, mix Dijon mustard, rosemary, thyme, garlic, salt, and pepper.
Pat the beef tenderloin dry and coat it evenly with the herb mixture.
Heat an oven-safe skillet over medium-high heat and sear the beef for about 2 minutes per side until beautifully browned.
Toss Brussels sprouts with olive oil, salt, and pepper, then add them to the pan around the beef.
Transfer the skillet to the oven and roast for 15–18 minutes, depending on your preferred doneness.

Remove from the oven and let the beef rest for 5 minutes before slicing. Serve with the roasted Brussels sprouts.
