🧀 Chicken Enchiladas (Greek Yogurt Remix)

Ingredients:


  • 2 cups cooked, shredded chicken (rotisserie works great!)

  • 1 cup plain Greek yogurt

  • 1 cup shredded cheddar or Mexican blend cheese (plus extra for topping)

  • 1/2 cup enchilada sauce (plus extra for topping)

  • 1/4 cup diced green chilies (optional but adds a nice kick)

  • 1/2 tsp cumin

  • 1/2 tsp garlic powder

  • 1/2 tsp onion powder

  • Salt & pepper to taste

  • 6–8 soft flour or corn tortillas


Directions:


  1. Preheat your oven to 375°F.

  2. In a large bowl, mix shredded chicken, Greek yogurt, 1 cup cheese, green chilies, and seasonings.

  3. Warm tortillas slightly (10–15 sec in the microwave so they’re pliable).

  4. Spoon the filling into each tortilla, roll tightly, and place seam-side down in a greased baking dish.

  5. Pour remaining enchilada sauce over the top, sprinkle with more cheese (because, duh), and cover with foil.

  6. Bake for 20 minutes, then remove foil and broil for 3–5 mins for that bubbly cheese top.

  7. Garnish with cilantro, jalapeños, or a dollop of Greek yogurt for that full-circle moment.






🍛 Puerto Rican Rice with Gandules (Arroz con Gandules)

Ingredients:


  • 2 tbsp olive oil

  • 1/2 cup sofrito (homemade or store-bought)

  • 1 packet Sazón with achiote

  • 1 tsp adobo seasoning

  • 1/2 tsp oregano

  • 1 can (15 oz) gandules (pigeon peas), drained

  • 1/4 cup tomato sauce

  • 1 1/2 cups long grain rice

  • 2 1/2 cups water or chicken broth

  • Salt to taste




Directions:


  1. In a medium pot, heat olive oil over medium heat. Add sofrito and sauté for 2–3 minutes until fragrant.

  2. Stir in tomato sauce, Sazón, adobo, and oregano. Cook for another minute.

  3. Add gandules, rice, and water or broth. Stir and bring to a boil.

  4. Once boiling, reduce to low, cover, and simmer for 25–30 minutes. Don’t peek—let that steam do its thing!

  5. Fluff with a fork and get ready to fall in love.
